Replace XAU/USD with USD/CAD — TwelveData has no gold data

Browse Source 
XAU/USD is not available in TwelveData's symbol list.
Swapped to USD/CAD across config, scan pairs, Telegram buttons,
and added CAD to tracked news currencies.
