gitignore: cover .env.* swap files and the whole logs/ directory

Rotated logs (telegram.log.YYYY-MM-DD) don't match *.log and a vim .env.swp was nearly committed by a bulk add. Claude-Session: https://claude.ai/code/session_01VPNF37MP9Kuv62B1VBrZ1b
